ORIGIN OF CASARECCE
This shape is firmly rooted in Sicilian cuisine! Originally made by hand in the kitchen, this form was loosely rolled by hand lengthwise creating a slightly folded twisted pasta. Our version is bronze drawn, having a similar subtle twist.
Casarecce does share similarities with other traditional pastas throughout Italy, including fusilloni, cavatelli and strozzapreti.
