EINKORN STROZZAPRETI

This twisty pasta is made with 100% Einkorn wheat, which has a delicate texture and pleasant savoury flavour. Einkorn is arguably the worlds oldest cultivated grain, dating back to 7500 BC. Einkorn is a very limited speciality crop.

Try this pasta with butter or olive oil-based sauces. With the unique flavour and texture sauces as simple as aged butter, pecorino and black pepper are delightful. Sometimes simplicity is best!

THE PROCESS TO CREATE OUR UNIQUE GRAINS

Our featured unique grains are crafted in limited-batches, sometimes only once a year! The specific pasta selection changes with the season, the month, or as inspiration strikes, though we have a couple favorites we'll feature more than once a year.

There are so many ancient and heirloom varieties of grains available, but there are a few that make excellent pasta. In this collection, you'll find a variety of unique and interesting types of wheat like Spelt, Khorasan, Einkorn and "Smith's Gold". We've intentionally paired the wheat and shape together with the idea in mind that the two combine to create something truly memorable. 

Khorasan is an ancient grain that dates back over 4000 years and was recently rediscovered in the 1940s in Egypt. Khorasan has a buttery flavor and mild nutty aroma.

Einkorn is the oldest cultivated grain dating as far back as 14,000 years.  Einkorn is bold yet mild with complex flavors and a delicate texture.

Whole grain durum wheat is a flavorful grain. Durum is the grain that semolina comes from- except this is milled on a stone mill and has all the bran and germ, making it full flavored and robust.

Smith's Gold is a variety of Red Winter wheat that was developed at OSU to be used to make artisan pasta that has a full, balanced flavor and is texturally rewarding.

Whole grain pasta generally have two to three times the fiber than standard pastas. With many people wanting to consume healthier meal options, the demand for whole-grain options have increased. We go out of our way to source high-quality ancient grain flour and feel it is imperative to preserve that quality by making those pastas 100% whole grain. We are proud to be an American made company.

WHOLE DURUM CAMPANELLE 

Our durum wheat comes from a farm in Garfield County, Oklahoma and is stone milled locally in Enid, Oklahoma. The flavor is deep, nutty and delicious.

Pair this pasta with brown butter, mushrooms, bacon and parmesan for something truly tasty.

The beautiful ruffled edges of campanelle pair well with the full flavor of the wheat.

This pasta is made with locally grown organic whole grain durum wheat.

KHORASAN CASARECCE

A curvy and wavy pasta, the best shape for saucy sauces! Made with 100% Khorasan wheat flour, which is an ancient grain that is known for its nutty, buttery flavor. Khorasan is thought to be a 4500 year old grain that originated in Mesopotamia and is a rich source of protein and numerous essential nutrients.

Pair with any sauce from "mac n cheese" to olive oil and pepper flake, or any other light to medium style sauce.

Made with organic whole grain Khorasan flour.

WHOLE WHEAT FUSILLI 

The bluebeard variety of durum wheat is locally grown on a farm in Garfield County, Oklahoma, and was then stone milled locally in Enid, Oklahoma. The flavor is deep, nutty and delicious. 

Pair this pasta with mushrooms, shallots, garlic and savory herbs & your favorite grated cheese.

The Whole Wheat Fusilli is shaped like a double helix spiral and can be referred to as "little spindles".

This pasta was made with bluebeard durum wheat.
