In this collection, you'll find a variety of unique and interesting types of wheat like Spelt, Khorasan, Einkorn and "Smith's Gold". We've intentionally paired the wheat and shape together with the idea in mind that the two combine to create something truly memorable. Whole grain pasta generally have two to three times the fiber than standard pastas. With many people wanting to consume healthier meal options, the demand for whole-grain options have increased. We go out of our way to source high-quality ancient grain flour and feel it is imperative to preserve that quality by making those pastas 100% whole grain. Spelt: An ancient grain that dates back over 8000 years. Our spelt pasta has a balanced full wheat flavor.
Khorasan: Is an ancient grain that dates back over 4000 years and was recently rediscovered in the 1940s in Egypt. Khorasan has a buttery flavor and mild nutty aroma.
Einkorn: The oldest cultivated grain dating as far back as 14,000 years. Einkorn is bold yet mild with complex flavors and a delicate texture.
Smith's Gold: A variety of Red Winter wheat that was developed at OSU to be used to make artisan pasta that has a full, balanced flavor and is texturally rewarding.
